For those of you who think that adopting a live-food lifestyle means giving up a lot of the taste of the things you love, this simple 7-ingredient recipe will likely create a bit of cognitive dissonance. After all, to make really creamy mayonnaise, you gotta have some eggs, right? Enter cashews! Cashews have a buttery, mildly sweet flavor and rich texture. They are versatile and lower in fat than, let's say, almonds. They are an excellent source of protein and heart-healthy monounsaturated and polyunsaturated fatty acids. Cashews even contain vitamin C. Taste this cashew mayonnaise you'll agree they are also the perfect substitute for eggs.
